South Indian Aglio e Olio Pasta

A bold South Indian twist on an Italian classic, pasta is tossed with butter, chili flakes, and Chinni’s Garlic Achaar. This silky pasta dish is citrusy, garlicky, and deeply satisfying. Simple ingredients, unforgettable flavor.

Ingredients

  • 8 ounces of your favorite pasta
  • 3 tablespoons Garlic Achaar 
  • 2 tablespoons unsalted butter 
  • A few pinches of red chili flakes 
  • ¼–½ cup reserved pasta water 
  • Salt to taste

Directions

  1. Cook your favorite pasta shape according to package instructions, reserving about ½ cup of the pasta water. 
  2. In a medium saucepan, add the Garlic Achaar, chili flakes, cooked pasta, and some of the pasta water.
  3. Toss to coat the pasta evenly, adding more pasta water as needed. Once the sauce thickens slightly, finish with the butter. Toss again and plate. 

We like to garnish ours with toasted breadcrumbs and a soft egg on top.
